Well, put simply it looks at everything - The word holistic is defined by the belief that the parts of something are interconnected and can only be explained by reference to the whole.

I believe when it comes to fitness and wellbeing, we should be looking at the whole person and trying to find a healthy lifestyle balance, rather than focusing on how many reps we can do or fad diets - they don't work by the way.
